InversionEdge sharpening takes minutes, with results that are more accurate and consistent because human error is eliminated from the angling of the blade. It can be used to create or hone a double bevel: a large narrow-angled secondary bevel to minimise cutting resistance, and a tiny primary bevel for extreme sharpness.
The system is suitable for both Western-style symmetrical blades and Japanese-style asymmetric, chisel-edge blade (like our own Söliditi Usudeba). It can also turn a symmetrical blade into a high-performing chisel-edge.
The set contains two double-sided Naniwa Stones: the coarse side is for honing the secondary bevel, the fine side for honing the primary bevel. The Stone you use depends on whether you’re rescuing a blunt knife or refining a sharp one. The Love Handle clip, which attaches to the Stone, ensures that each bevel is created at the perfect angle. The ferritic steel Nöni Tray provides two angled platforms on which to work, and the rubberised magnets mount your knife securely to the platform while you sharpen.
